When exploring why another implementation of the Beautiful Hugo theme had summaries that looked much nicer than what I was seeing on my own site, I found out how Content Summaries are determined.
I found that manually specifying the summary gave me what I was looking for. To do that, you need to understand the consequences (see the link above for details) and then include the following after the portion of your document you want to be the summary.

As the docs say, you need to be sure it is all lowercase and no whitespace.
Once you do this the listing of your post will be a bit cleaner and the “Read More” link will be on the same line as the tags instead of at the end of the truncated post content.
